Soft-Ripened Cheese

Acapella is goat's milk singing without accompaniment. Andante's Acapella comes in the following forms:

Pyramid - a truncated pyramid shape, 7-8 oz, which is aged to be dry and firm.

Round - a small round, about 3 oz, which is aged to be soft and creamy.

Ashed Round - about 4-6oz, which is aged to be soft and creamy. Ash is added when salting, assisting rind formation and giving classic french goat milk appearance.
