CrottinClassic CrottinThis is the only cheese that Andante makes that is a direct replica of a traditional variety. Crottin is Soyoung's favorite goat's milk cheese. When it is young it is simple and pleasant. Aging brings out all the beauty of goat's milk cheese - pleasant tanginess, fine, marble-like texture, with a long and nutty finish. General Characteristics: Moist and lactic when young, dry and nutty when aged. Size and Shape: 1" diameter, 2" thick. Affinage takes two to four weeks.
