Impromptu

Aged Hard Cheese

Impromptu is the name for Soyoung's hard cheese. It may be goat's milk or mixed-milk. It is made whenever there is a sudden oversupply of milk, thus the name.

General Characteristics: When properly aged, this cheese is firm, nutty and smooth on the tongue with butterscotch hints, and a long finish. This cheese is primarily made in winter and spring, using Pyrenees techniques.

Size and Shape: Varies.

Aging: Six months to two years.
