Aged Triple-Cream Cheese

Largo is unique - an aged triple-cream cheese. The closest cheese is La Bouille, a very rare French cheese from Haute-Normandie. The word "Largo" means "broad" or "generous" in Italian. As a musical term, it is a tempo mark meaning "to be performed slowly." Soyoung's favorite song is "Lascia ch'io pianga," which has the tempo mark Largo.

General Characteristics: Largo is designed to bring out the lusciousness of rich Jersey milk and crème fraîche. When aged, this cheese is soft, nutty and smooth on the tongue with powerful mushroomy notes.
