Andante Mélange is designed in order to bring out maximum future: its piquant delicacy of goat's milk cheese and the richness of cow's milk cheese, by combining two milks.

General Characteristics: Firm and moist when very young. The taste is pleasantly tart with some sweetness and spice. By aging it develops a texture and strong flavor reminiscent of traditional Brie.
