Nocturne

Soft-Ripened Cheese

The color of this cheese reminds me of Whistler's painting " Nocturnes". Its delicate flavor and slow cheese making process are reminiscent of the gentle movement of Chopin's piano pieces 'Nocturnes', which I like to play the most.

Slightly tart and firm when very young, then softer and creamy with aging. The taste becomes more mushroomy and bold the longer the cheese is aged.

It has a gray surface from white mold and vegetable ashc. The inside is moist and heavy.
